Yuxiang Shredded Pork is a classic Sichuan dish, known for its balance of sour, sweet, savory, and spicy flavors. Below is the home-style recipe for Yuxiang Shredded Pork:
Ingredients for Home-Style Yuxiang Shredded Pork:
- Pork loin: 300g
- Rehydrated wood ear mushrooms: 50g
- Carrot: 50g
- Green pepper: 50g
- Scallions, ginger, garlic: appropriate amount
For Marinating the Pork:
- Light soy sauce: 1 tbsp
- Cooking wine: 1 tbsp
- Cornstarch: 1.5 tbsp
- Cooking oil: 1 tbsp
For the Yuxiang Sauce:
- Light soy sauce: 2 tbsp
- Chinkiang vinegar: 2.5 tbsp
- Sugar: 1.5 tbsp
- Cornstarch: 1 tbsp
- Water: 3 tbsp
- Doubanjiang (broad bean paste): 1 tbsp
Instructions:
- Cut the pork loin into evenly thick strips. Place them in a bowl, add the marinade ingredients, mix well, and marinate for 10 minutes. Slice the rehydrated wood ear mushrooms, carrot, and green pepper into strips. Mince the scallions, ginger, and garlic, and set aside.
- Take an empty bowl and add all the ingredients for the Yuxiang sauce. Stir well and set aside.
- Heat a wok with cold oil. Once the oil is hot, add the marinated pork strips. Use chopsticks to quickly separate them, stir-fry until the pork changes color, then immediately remove from the wok.
- Leave a little oil in the wok. Add the minced scallions, ginger, and garlic to fragrant. Then add the carrot strips and stir-fry for 1 minute. Next, add the wood ear mushroom strips and green pepper strips, and continue stir-frying for another 30 seconds until the vegetables are just cooked through.
- Pour the prepared Yuxiang sauce into the wok. Turn to medium heat and stir quickly until the Yuxiang sauce thickens and bubbles. Then, add the previously stir-fried pork strips, and toss to coat every piece evenly with the sauce. Continue stir-frying for about 1 minute more before turning off the heat and serving.
